falling

i screwed up some custard today and wasted about half a carton of milk. i was boiling it with some sour cream, and i think the sour cream caused it to curdle (, which formed cheese?)

so of course i threw the failed one yet, and cooked some again.
this is a very simple lemon cup custard. just steep lemon zest in boiled milk, then temper with eggs and sugar. skim off the foam, and ladle into ramekins. bake in a water bath, cool, and chill. the baked custard is gentle, soothing, and subtly lemony.

for a while, everything seems ok, and maybe it really is. i still don't understand why durians are spikey.
