irrevocably

whoo i just came back from watching twilight with chengwei, eddie and daniel. i think the acting from the supporting cast was quite lousy, and the music often sounds unresolved. but it's spectacular to fly up a tree and overlook the whole valley.

anyway, today morning i baked oat scones from martha stewart. kind of back to the bake-a-something-in-the-morning mood. but i like these more for the fact that the dough can/should be made the night before: pop it into the freezer and leave overnight, and just heat up the oven and bake them the next morning.
this is the sandy rubble of dry ingredients rubbed with the butter. a lot of butter, in fact. the recipe called for rolled oats, but i used instant oatmeal, though i have already spotted the real stuff at ntuc some time ago; trying to clear stock here. oh yes i've already started using my new pack of gold medal unbleached all-purpose flour. this flour is just a little brownish compared to bleached flour, but much cheaper - i think i'll be a convert to that.
after mixing in the buttermilk (or rather a mixture of cream and yoghurt), the dough came together nicely.
i patted the dough into a long rectangle as directed, and scored it. i love the look of the unbaked dough; it's like a large block of walker's shortbread.
because the dough can be kept frozen up to a month, and because of the nature of the amount of ingredients i had, it seemed only logical for me to make up a double batch of dough and stash the other until i next want to eat the scones again. so here i made two batches and froze them.
this morning i took out one block of dough and sliced it up into twelve pieces. glazed the scones with whipping cream and popped them into the oven. i love the way these scones look unbaked - sharp edges, 'iced' with whipping cream trickling down the sides.
but the scones spread a lot during the baking and lost their sharp, defined edges. the resulting baked good was too crumbly for my liking, but very tasty nevertheless. i don't know how the result would change if i used rolled oats instead of instant oatmeal. maybe something less fragile, less crumbly?
