as usual

i made pie again! i call these 'one-apple pies', because each one contains exactly one apple.
this was the debut of my pastry blender. quite clumsy with handling it this time, but i believe i'll get better.
i divided and wrapped the dough in ziplocs for freezing. (i made the dough a few days in advance.) i think packing them in slabs in ziplocs makes it easier for rolling.
i rolled the dough out and cut them into rectangles for the base, topped them with the apple filling, and then covered with the dough on top. crimped the edges, poked some vents, and decorated with some rudimentary, middle-finger-looking apple designs (again).
ok so the filling boiled over happily and flowed everywhere, and the aftermath is a baking tray streaked with dark amber burnt caramels.

anyhow, i'm back from guard duty overnight, and tonight i'm going back in again =( i shared the apple pies at guard duty, and it was quite nice. the problem is, the dough had no salt; i just used nigella's formula and forgot the salt. never mind, i've written it down and slid it under my plastic board on the kitchen table (along with the sunday bread recipe.)

when you look down the vehicle shed in the evening, when the last light is fading away, you can see the amazing transition from blue to pale pinky orange, then to murky bluey violet. and then you'll be left with darkness. darkness and the stars. again, when you look at stars, you look into the past.

i read the kite runner in dim light, with a mosquito coil beside me releasing a steady stream of incensed smoke. this is the list of songs that came to me in the night:
